- 200 grams of digestive biscuits (or graham crackers)
- 100 grams of unsalted butter, melted
- 250 grams of mascarpone cheese
- 200 ml of heavy cream
- 100 grams of powdered sugar
- 300 grams of fresh strawberries, pureed (plus extra for garnish)
- 1 teaspoon of vanilla extract
- 2 tablespoons of cocoa powder (for dusting)
- 1 tablespoon of lemon juice
- A pinch of salt
Instructions
- Prepare the Biscuit Base: Crush the digestive biscuits into fine crumbs and mix with melted butter. Press into a lined 9×9 inch baking dish and freeze.
- Make the Strawberry Mousse: Combine pureed strawberries, lemon juice, and powdered sugar. Whip heavy cream and fold into the strawberry mixture.
- Prepare the Mascarpone Layer: Beat mascarpone cheese with vanilla extract and a pinch of salt until smooth.
- Assemble the Bars: Spread the mascarpone layer over the biscuit base, then spoon the strawberry mousse on top.
- Freeze: Cover and freeze for at least 4 hours until set.
- Serve: Remove from the dish, cut into squares, dust with cocoa powder, and garnish with fresh strawberries.
Notes
- Store leftovers in an airtight container in the freezer for up to a month.
- Let bars sit at room temperature for 10-15 minutes before slicing for easier cutting.
- For a more intense strawberry flavor, add strawberry extract to the mousse.
