Description

A delightful treat that combines creamy yogurt with the crunch of pistachios and the sweetness of honey, making it a refreshing snack or dessert.


Ingredients

  • 2 cups Greek yogurt (plain or vanilla)
  • 1/4 cup honey (plus extra for drizzling)
  • 1/2 cup shelled pistachios, chopped
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • A pinch of sea salt

Instructions

  1. Line a baking sheet or a shallow dish with parchment paper.
  2. In a mixing bowl, combine the Greek yogurt and 1/4 cup of honey. Stir until well blended and smooth.
  3. Pour the yogurt and honey mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thick.
  4. Evenly distribute the sliced strawberries and blueberries over the yogurt layer, then sprinkle the chopped pistachios on top.
  5. Drizzle a little extra honey over the entire surface.
  6. Lightly sprinkle a pinch of sea salt over the top.
  7. Place the baking sheet in the freezer and let it freeze for at least 4 hours.
  8. Once frozen, remove the yogurt bark from the baking sheet using the parchment paper overhang and cut it into pieces or break it into shards.

Notes

  • Store any leftover frozen yogurt bark in an airtight container in the freezer for up to two weeks.
  • For a smoother texture, use full-fat yogurt.
