- 2 cups Greek yogurt (plain or vanilla)
- 1/4 cup honey (plus extra for drizzling)
- 1/2 cup shelled pistachios, chopped
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- A pinch of sea salt
Instructions
- Line a baking sheet or a shallow dish with parchment paper.
- In a mixing bowl, combine the Greek yogurt and 1/4 cup of honey. Stir until well blended and smooth.
- Pour the yogurt and honey mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thick.
- Evenly distribute the sliced strawberries and blueberries over the yogurt layer, then sprinkle the chopped pistachios on top.
- Drizzle a little extra honey over the entire surface.
- Lightly sprinkle a pinch of sea salt over the top.
- Place the baking sheet in the freezer and let it freeze for at least 4 hours.
- Once frozen, remove the yogurt bark from the baking sheet using the parchment paper overhang and cut it into pieces or break it into shards.
Notes
- Store any leftover frozen yogurt bark in an airtight container in the freezer for up to two weeks.
- For a smoother texture, use full-fat yogurt.
