Description

Frozen Yogurt Granola Bars are a refreshing, no-bake treat made with creamy vanilla yogurt layered over a chewy, nutty granola base and topped with vibrant fresh berries. Perfect for breakfast, a midday snack, or a healthy dessert, these bars are easy to make and irresistibly delicious.


Ingredients

  • 1 1/2 cups old-fashioned rolled oats (gluten-free if needed)
  • 1/3 cup nut butter (almond or peanut butter)
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups vanilla yogurt or skyr
  • 1/3 cup fresh strawberries, sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup raspberries and/or blackberries (halved, optional)

Instructions

  1. Line an 8×8” or 9×9” baking dish with parchment paper, allowing some overhang for easy lifting.
  2. In a large bowl, mix oats, nut butter, maple syrup, vanilla, cinnamon, and salt until sticky and well combined.
  3. Press the oat mixture firmly and evenly into the bottom of the prepared dish to form the granola base.
  4. Spread the vanilla yogurt evenly over the granola base with a spatula.
  5. Top with sliced strawberries, blueberries, and halved raspberries or blackberries.
  6. Freeze for at least 2 hours, or until the yogurt is fully firm.
  7. Lift the mixture out using the parchment paper and cut into bars with a sharp knife.
  8. Store leftovers in an airtight container in the freezer.

Notes

  • Substitute sunflower seed or pumpkin seed butter for a nut-free version.
  • Use dairy-free yogurt for a vegan or lactose-free option.
  • Add cocoa powder or dried cranberries for flavor variations.
  • Let bars sit at room temperature for 2–3 minutes before eating for easier biting.
