Description
Frozen Yogurt Mochi Bites are a delightful fusion of chewy mochi and creamy yogurt, making them a refreshing treat for any occasion.
Ingredients
Scale
- 1 cup sweet rice flour (mochi flour)
- 1/2 cup water
- 1/4 cup sugar
- 1 cup yogurt (any flavor you prefer)
- 1/2 cup fruit puree (such as strawberry, mango, or blueberry)
- food coloring (optional)
Instructions
- Blend your chosen fresh fruit until smooth, or thaw and blend frozen fruit. Set aside.
- In a microwave-safe bowl, combine sweet rice flour, sugar, food coloring if using, and water. Stir until smooth and free of lumps.
- Cover the bowl with plastic wrap, leaving a small vent. Microwave on high for 1 minute, stir, then microwave for another minute. Stir again and microwave for an additional 30 seconds until thick and slightly sticky.
- Allow the mochi dough to cool slightly. Dust your work surface with sweet rice flour, divide the dough, flatten each piece, and fill with yogurt and fruit puree.
- Fold the edges of the mochi over the filling, pinch to seal, and roll into balls. Place on a parchment-lined baking sheet and freeze for at least 2 hours.
Notes
- For a gluten-free option, ensure you use certified gluten-free sweet rice flour.
- Substitute yogurt with dairy-free yogurt for a vegan version.
- Experiment with different fruit purees to create unique flavor combinations.
