Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 cup yogurt (any flavor you prefer)
  • 1/2 cup fruit puree (such as strawberry, mango, or blueberry)
  • food coloring (optional)

Instructions

  1. Blend your chosen fresh fruit until smooth, or thaw and blend frozen fruit. Set aside.
  2. In a microwave-safe bowl, combine sweet rice flour, sugar, food coloring if using, and water. Stir until smooth and free of lumps.
  3. Cover the bowl with plastic wrap, leaving a small vent. Microwave on high for 1 minute, stir, then microwave for another minute. Stir again and microwave for an additional 30 seconds until thick and slightly sticky.
  4. Allow the mochi dough to cool slightly. Dust your work surface with sweet rice flour, divide the dough, flatten each piece, and fill with yogurt and fruit puree.
  5. Fold the edges of the mochi over the filling, pinch to seal, and roll into balls. Place on a parchment-lined baking sheet and freeze for at least 2 hours.
