Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, cream together softened butter and granulated sugar until light and fluffy (2-3 minutes).
- Add the egg and vanilla extract to the creamed mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Line a baking sheet with parchment paper. Scoop tablespoon-sized dough balls, place them on the sheet, and flatten slightly.

- Meanwhile, prepare the frosting by beating softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once cookies are completely cooled, spread a generous layer of cream cheese frosting on each cookie.
- Decorate with assorted fresh fruit and optional mint leaves. Serve and enjoy!
