- 1/4 cup granulated sugar
- 1/2 tsp. kosher salt
- 10 Tbsp. butter, melted
- 1/2 tsp. almond extract
- 1/2 cup heavy cream
- 1 (8-oz.) container mascarpone cheese
- 4 oz. cream cheese, softened
- 1/2 cup powdered sugar
- Juice of 1/2 lemon
- 1 cup sliced strawberries
- 1 cup blackberries
- 1 cup raspberries
- 2 mandarins, segmented
- 1/3 cup blueberries
- 1/4 cup apricot preserves
Instructions
- Preheat oven to 350°F (175°C). In a bowl, whisk flour, granulated sugar, and salt. Add melted butter and almond extract. Stir to form dough and press into a 10-inch tart pan. Prick bottom with a fork.
- Bake crust for 20–25 minutes or until golden brown. Let cool completely in pan.
- In a medium bowl, whip heavy cream to stiff peaks. In another bowl, beat mascarpone, cream cheese, powdered sugar, lemon juice, and almond extract until smooth. Gently fold in whipped cream.
- Spread filling into cooled crust. Arrange sliced strawberries, blackberries, raspberries, mandarins, and blueberries on top decoratively.
- Heat apricot preserves with 2 tsp water in the microwave for 30 seconds. Stir and brush over fruit for a glossy finish.
- Refrigerate tart for at least 2 hours before serving to set the filling.
