Description

This vibrant Fruit Tart combines a buttery almond-scented crust with a creamy mascarpone and cream cheese filling, topped with a medley of fresh berries and mandarins. Finished with a glossy apricot glaze, it’s a refreshing and elegant dessert perfect for any occasion.

  • 1 1/3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp. kosher salt
  • 10 Tbsp. butter, melted
  • 1/2 tsp. almond extract
  • 1/2 cup heavy cream
  • 1 (8-oz.) container mascarpone cheese
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar
  • Juice of 1/2 lemon
  • 1 cup sliced strawberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 2 mandarins, segmented
  • 1/3 cup blueberries
  • 1/4 cup apricot preserves

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, whisk flour, granulated sugar, and salt. Add melted butter and almond extract. Stir to form dough and press into a 10-inch tart pan. Prick bottom with a fork.
  2. Bake crust for 20–25 minutes or until golden brown. Let cool completely in pan.
  3. In a medium bowl, whip heavy cream to stiff peaks. In another bowl, beat mascarpone, cream cheese, powdered sugar, lemon juice, and almond extract until smooth. Gently fold in whipped cream.
  4. Spread filling into cooled crust. Arrange sliced strawberries, blackberries, raspberries, mandarins, and blueberries on top decoratively.
  5. Heat apricot preserves with 2 tsp water in the microwave for 30 seconds. Stir and brush over fruit for a glossy finish.
  6. Refrigerate tart for at least 2 hours before serving to set the filling.

  • Use coconut cream and dairy-free cheese for a dairy-free tart.
