Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (2–3 minutes).
- Add the eggs and vanilla extract. Beat until well combined, scraping down the sides as needed.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Gently fold in the rainbow sprinkles using a spatula.
- Use a cookie scoop or tablespoon to portion the dough onto prepared baking sheets, spacing evenly.
- Top each cookie with extra rainbow sprinkles for a vibrant finish.
- Bake for 10–12 minutes, or until the edges are golden. The centers will look slightly underbaked.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
