  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 45 tablespoons ice water
  • 8 ounces German chocolate, coarsely chopped
  • ½ cup unsalted butter
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and salt. Add cold diced butter and cut it into the flour until crumbly. Stir in sugar, then add ice water a tablespoon at a time until a dough forms. Roll it out and place it in a pie pan. Trim excess.
  2. Prick crust with a fork. Line with parchment paper and pie weights or beans. Bake for 15 minutes. Remove weights and bake for 10 more minutes or until golden brown. Let cool completely.
  3. In a saucepan, melt German chocolate and butter over low heat, stirring until smooth.
  4. In a bowl, whisk sugar, eggs, and vanilla until blended. Slowly mix in the melted chocolate mixture, tempering the eggs.
  5. Fold in shredded coconut and chopped pecans until evenly mixed. Pour filling into cooled crust.
  6. Bake the pie for 25-30 minutes, or until center is set but slightly jiggly. Cool on a wire rack for at least 1 hour before serving.
