Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour and salt. Add cold diced butter and cut it into the flour until crumbly. Stir in sugar, then add ice water a tablespoon at a time until a dough forms. Roll it out and place it in a pie pan. Trim excess.
- Prick crust with a fork. Line with parchment paper and pie weights or beans. Bake for 15 minutes. Remove weights and bake for 10 more minutes or until golden brown. Let cool completely.
- In a saucepan, melt German chocolate and butter over low heat, stirring until smooth.
- In a bowl, whisk sugar, eggs, and vanilla until blended. Slowly mix in the melted chocolate mixture, tempering the eggs.
- Fold in shredded coconut and chopped pecans until evenly mixed. Pour filling into cooled crust.
- Bake the pie for 25-30 minutes, or until center is set but slightly jiggly. Cool on a wire rack for at least 1 hour before serving.
