Instructions

  1. In a bowl, mix ¾ cup warm water with yeast and ¼ cup sugar. Let sit 5–10 minutes until frothy.
  2. Add buttermilk, beaten egg, and melted butter. Mix well.
  3. Add flour one cup at a time, mixing until a dough forms.
  4. Knead on floured surface for 5–7 minutes until smooth. Let rise in a greased bowl, covered, for 1 hour or until doubled in size.
  5. Roll dough to ½-inch thickness. Cut into squares or rectangles.
  6. Heat oil in a deep pot to 350°F. Fry beignets in batches for 1–2 minutes per side until golden. Drain on paper towels.
  7. Whisk powdered sugar, milk, and vanilla extract until smooth to make glaze.
  8. Dip warm beignets in glaze and let excess drip off. Place on wire rack.
  9. Serve warm for best taste and texture.
