  • 1 cup cornmeal

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey (plus extra for drizzling)
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, combine the sliced strawberries with 2 tablespoons of sugar and let them sit for about 10 minutes.
  3. In a large mixing bowl, whisk together the cornmeal, all-purpose flour, remaining sugar, baking powder, and salt.
  4. In another bowl, whisk together the eggs, milk, melted butter, and honey until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Gently fold the macerated strawberries into the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes.
  8. While the cake is baking, make the honey butter by mixing softened butter, honey, and a pinch of salt.
  9. Once baked, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. Prepare the strawberry glaze using the juices released from the strawberries and drizzle it over the cooled cake.
  11. Slice the cake and serve it warm or at room temperature with honey butter.
