Description
Deliciously easy grilled banana peanut butter quesadillas that combine the sweetness of bananas with the creamy richness of peanut butter, all wrapped in a warm tortilla.

- 4 large flour tortillas
- 2 medium ripe bananas
- 1/2 cup creamy peanut butter
- 2 tablespoons honey (plus extra for drizzling)
- 1 teaspoon ground cinnamon
- Powdered sugar for dusting
- Butter or cooking spray for grilling
Instructions
- In a medium bowl, mash the ripe bananas with a fork until smooth. Stir in the creamy peanut butter, honey, and ground cinnamon until well combined.
- Lay out two flour tortillas on a clean surface. Evenly spread the banana-peanut butter mixture over each tortilla, leaving a small border around the edges. Place the remaining two tortillas on top to form two quesadillas.
- Heat a non-stick skillet or grill pan over medium heat. Add a small amount of butter or spray with cooking spray to prevent sticking.
- Carefully place one quesadilla in the hot skillet. Cook for about 2-3 minutes, or until the bottom is golden brown and crispy. Flip the quesadilla using a spatula and grill the other side for another 2-3 minutes until it is also golden brown and the filling is warm.
- Remove the first quesadilla from the skillet and place it on a cutting board. Repeat the grilling process with the second quesadilla.
- Once both quesadillas are cooked, let them cool for a minute. Cut each quesadilla into wedges. Drizzle with additional honey and dust with powdered sugar for an elegant finish.
- Serve warm as a delicious breakfast or snack.
Notes
- Store any leftover quesadillas in an airtight container in the refrigerator for up to 2 days.
- To reheat, place the quesadillas in a skillet over low heat until warmed through.
- For longer storage, you can freeze the assembled quesadillas before grilling.
