Description

A refreshing salad combining juicy grilled chicken and sweet peaches, topped with a tangy honey balsamic dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 4 cups mixed salad greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
  2. Grill the peach slices for 2-3 minutes on each side until caramelized. Remove from the grill.
  3. In a small bowl, whisk together balsamic vinegar, honey, and olive oil until well combined.
  4. In a large bowl, combine mixed salad greens, sliced peaches, and crumbled feta cheese. Add the grilled chicken slices on top.
  5. Drizzle the honey balsamic dressing over the salad and toss gently to combine. Serve immediately.

  • Store leftovers in an airtight container in the refrigerator for up to two days.
  • Keep the dressing separate until ready to eat to prevent wilting.
