A refreshing salad combining juicy grilled chicken and sweet peaches, topped with a tangy honey balsamic dressing.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 4 cups mixed salad greens
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
- Grill the peach slices for 2-3 minutes on each side until caramelized. Remove from the grill.
- In a small bowl, whisk together balsamic vinegar, honey, and olive oil until well combined.
- In a large bowl, combine mixed salad greens, sliced peaches, and crumbled feta cheese. Add the grilled chicken slices on top.
- Drizzle the honey balsamic dressing over the salad and toss gently to combine. Serve immediately.

- Keep the dressing separate until ready to eat to prevent wilting.
