- 4 pieces of flatbreads (store-bought or homemade)
- 2 pieces of grilled chicken breast (about 1 lb), cooked and sliced
- 2 ripe peaches, pitted and sliced
- 1/2 cup of your favorite barbecue sauce
- 1 small red onion, thinly sliced
- 1/4 cup of fresh cilantro, chopped
- 1 cup of shredded mozzarella cheese
- 1 tablespoon of olive oil (for brushing)
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Brush the peach slices lightly with olive oil and season with salt. Grill for 2-3 minutes on each side until caramelized.
- If not cooked, season chicken breasts and grill for 6-7 minutes on each side until fully cooked.
- Assemble flatbreads by spreading barbecue sauce, then layering chicken, peaches, onion, and cheese.
- Melt cheese by baking at 400°F for 8-10 minutes or grilling for 5-7 minutes.
- Garnish with cilantro, slice, and serve warm.
