Description

A delightful dish that combines sweet and savory flavors with juicy peaches and BBQ chicken on crispy flatbread.


Ingredients

  • 4 pieces of flatbreads (store-bought or homemade)
  • 2 pieces of grilled chicken breast (about 1 lb), cooked and sliced
  • 2 ripe peaches, pitted and sliced
  • 1/2 cup of your favorite barbecue sauce
  • 1 small red onion, thinly sliced
  • 1/4 cup of fresh cilantro, chopped
  • 1 cup of shredded mozzarella cheese
  • 1 tablespoon of olive oil (for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the peach slices lightly with olive oil and season with salt. Grill for 2-3 minutes on each side until caramelized.
  3. If not cooked, season chicken breasts and grill for 6-7 minutes on each side until fully cooked.
  4. Assemble flatbreads by spreading barbecue sauce, then layering chicken, peaches, onion, and cheese.
  5. Melt cheese by baking at 400°F for 8-10 minutes or grilling for 5-7 minutes.
  6. Garnish with cilantro, slice, and serve warm.
