A delightful salad combining sweet grilled peaches and tender chicken, dressed with a tangy honey balsamic dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe peaches, halved and pitted
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
  2. Grill the peach halves cut side down for 3-4 minutes until grill marks appear and they soften slightly. Remove and set aside.
  3. In a small bowl, whisk together balsamic vinegar, honey, and olive oil. Season with salt and pepper to taste.
  4. In a large bowl, combine mixed greens, sliced chicken, grilled peaches, crumbled feta, and chopped walnuts. Drizzle with dressing and toss gently. Serve immediately.
