A delightful salad combining sweet grilled peaches and tender chicken, dressed with a tangy honey balsamic dressing.

- 2 boneless, skinless chicken breasts
- 2 ripe peaches, halved and pitted
- 4 cups mixed salad greens
- 1/2 cup crumbled feta cheese
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
- Grill the peach halves cut side down for 3-4 minutes until grill marks appear and they soften slightly. Remove and set aside.
- In a small bowl, whisk together balsamic vinegar, honey, and olive oil. Season with salt and pepper to taste.
- In a large bowl, combine mixed greens, sliced chicken, grilled peaches, crumbled feta, and chopped walnuts. Drizzle with dressing and toss gently. Serve immediately.
