A refreshing and flavorful salad featuring grilled chicken and caramelized pineapple, perfect for summer gatherings.
Ingredients

- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 1 cup fresh pineapple, cut into rings
- 4 cups mixed greens (such as spinach, arugula, and romaine)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken breasts in olive oil, lime juice, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side until fully cooked. Grill the pineapple slices for about 3-4 minutes on each side until they have nice grill marks.
- Once grilled, let the chicken and pineapple cool slightly, then slice them into bite-sized pieces.
- In a large bowl, combine the salad greens, cherry tomatoes, red onion, and avocado.
- Add the grilled chicken and pineapple to the salad, drizzle with the lime dressing made from the remaining olive oil and lime juice, and toss gently to combine. Serve immediately!
Notes
- For a vegan option, replace chicken with grilled tofu.
- Store leftovers in an airtight container in the refrigerator and consume within 2 days.
- To reheat, warm the chicken in a skillet over low heat, but avoid reheating the salad greens.
