  • 1 ripe pineapple
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup heavy whipping cream
  • 1 cup coconut cream
  • ½ teaspoon vanilla extract
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Cut the top and bottom off the pineapple, slice off the skin, and remove the eyes. Slice into 1-inch thick rings.
  2. Mix brown sugar and ground cinnamon in a small bowl. Sprinkle over both sides of the pineapple slices. Let marinate for 15-20 minutes.
  3. Preheat the grill or grill pan to medium-high heat.
  4. Grill the pineapple rings for 4-5 minutes per side until grill marks appear and the pineapple is tender. Remove and let cool slightly.
  5. In a mixing bowl, combine heavy whipping cream, coconut cream, vanilla extract, and powdered sugar (if using). Whip until soft peaks form.
  6. Serve grilled pineapple with a generous dollop of coconut cinnamon whipped cream. Garnish with cinnamon, honey, or fresh mint if desired.

  • Canned pineapple can be used in place of fresh, but choose one packed in juice.
