A comforting and flavorful Ground Beef Taco Rice Casserole that combines tender ground beef, zesty taco seasoning, and fluffy rice, perfect for busy weeknights or family gatherings.

- 1 pound ground beef
- 2 cups cooked rice (preferably long-grain)
- 1 packet taco seasoning (about 1 oz or 28 g)
- 1 can (15 oz or 425 g) black beans, drained and rinsed
- 1 can (15 oz or 425 g) corn, drained
- 1 can (14.5 oz or 410 g) diced tomatoes, undrained
- 2 cups shredded cheese (about 200 g, cheddar or a Mexican blend)
- 1/2 cup green onions, chopped (for garnish)
- 1 tablespoon olive oil (for cooking)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and season with salt and pepper. Cook until browned and fully cooked, breaking it into small crumbles. Drain excess fat.
- In a large mixing bowl, combine the cooked ground beef, cooked rice, taco seasoning, black beans, corn, and diced tomatoes (with their juice). Stir until well mixed.
- Grease a 9×13 inch (23×33 cm) baking dish. Pour the beef and rice mixture into the dish, spreading it evenly. Top with shredded cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly crispy.
- Remove from the oven, let cool for a few minutes, and garnish with chopped green onions. Serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, microwave individual portions or warm in the oven at 350°F (175°C).
- For freezing, wrap tightly in plastic wrap and foil; it can be frozen for up to 3 months.
