Description

Hawaiian Banana Bread is a tropical twist on the classic banana bread, blending sweet ripe bananas with shredded coconut and crunchy macadamia nuts. Moist, flavorful, and easy to make, it’s perfect for breakfast, brunch, or a tropical-inspired treat any time of day.


Ingredients

  • 4 ripe bananas, mashed
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups all-purpose flour
  • ½ cup shredded coconut
  • ½ cup chopped macadamia nuts
  • Optional: ½ cup crushed pineapple, drained

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add mashed bananas, eggs, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and stir until just combined.
  5. Fold in shredded coconut and chopped macadamia nuts.
  6. If using crushed pineapple, fold it in now.
  7. Pour the batter into the prepared loaf pan and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
