- 4 ripe bananas, mashed
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1½ cups all-purpose flour
- ½ cup shredded coconut
- ½ cup chopped macadamia nuts
- Optional: ½ cup crushed pineapple, drained
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Add mashed bananas, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and stir until just combined.
- Fold in shredded coconut and chopped macadamia nuts.
- If using crushed pineapple, fold it in now.
- Pour the batter into the prepared loaf pan and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
