Description

These Hawaiian Waffles bring tropical flavor to your breakfast table with crushed pineapple, coconut, and macadamia nuts, all topped with a warm pineapple-coconut syrup.


Ingredients

  • 1 can (20 ounces) crushed pineapple, undrained
  • ½ cup sugar
  • ½ cup sweetened shredded coconut
  • ½ cup light corn syrup
  • ¼ cup pineapple juice
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 2 large eggs, separated, room temperature
  • 1 cup 2% milk
  • ¼ cup butter, melted
  • 1 can (8 ounces) crushed pineapple, well drained
  • ¼ cup sweetened shredded coconut
  • ¼ cup chopped macadamia nuts
  • Additional chopped macadamia nuts, toasted, optional

Instructions

  1. In a large saucepan, combine undrained crushed pineapple, sugar, sweetened shredded coconut, corn syrup, and pineapple juice. Bring to a boil over medium heat.
  2. Reduce heat and simmer uncovered for 12–15 minutes until sauce thickens. Stir occasionally. Remove from heat and set aside.
  3. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  4. In another bowl, mix egg yolks, milk, and melted butter. Stir into the dry ingredients until just combined.
  5. Fold in well-drained crushed pineapple, sweetened shredded coconut, and chopped macadamia nuts.
  6. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter until fully incorporated.
  7. Preheat waffle maker according to manufacturer’s instructions.
  8. Pour batter into waffle maker (about ½ to ¾ cup per waffle), and cook until golden brown and crisp.
  9. Serve waffles warm, topped with the pineapple sauce and optional additional chopped macadamia nuts.

Notes

  • For a dairy-free version, use coconut milk and coconut oil instead of milk and butter.
  • You can swap the flour for a gluten-free blend if needed.
  • Try adding diced mango or passion fruit to the batter for extra tropical flair.
  • The pineapple sauce can be made ahead and stored in the refrigerator for up to 3 days.
