  • 1 cup almonds
  • 1 cup pecans
  • 1 cup cream
  • 1 teaspoon vanilla

  • 4 eggs
  • 1/2 cup sugar (for the pastry cream)
  • 2 cups milk (for the pastry cream)
  • 1/4 cup cornstarch (for the pastry cream)
  • 1 teaspoon hazelnut essence (for the pastry cream)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, bring the water, butter, and a pinch of salt to a boil over medium heat.
  3. Remove from heat and stir in the flour until smooth.
  4. Return the saucepan to the heat and cook for 2-3 minutes, stirring constantly.
  5. Transfer the dough to a bowl and let it cool for 5 minutes.
  6. Beat in eggs one at a time until the dough is shiny and smooth.
  7. Pipe or spoon the dough into small mounds on a parchment-lined baking sheet.
  8. Bake for 20-25 minutes, then reduce the oven temperature to 350°F (175°C) and bake for an additional 10-15 minutes to ensure the centers are cooked through.
  9. For the hazelnut filling, make a classic pastry cream with milk, sugar, cornstarch, and hazelnut essence, then add the roasted hazelnuts to the cream.
  10. For the praline sauce, caramelize the hazelnuts, almonds, and pecans, then blend them with cream and vanilla.
  11. Once the choux pastries are baked and cooled, fill them with the hazelnut pastry cream and drizzle the praline sauce on top.
  12. Serve on a tiered platter with additional chopped toasted hazelnuts and a dusting of powdered sugar for presentation.
