Instructions
- Preheat your oven to 400°F (200°C).
- In a medium saucepan, bring the water, butter, and a pinch of salt to a boil over medium heat.
- Remove from heat and stir in the flour until smooth.
- Return the saucepan to the heat and cook for 2-3 minutes, stirring constantly.
- Transfer the dough to a bowl and let it cool for 5 minutes.
- Beat in eggs one at a time until the dough is shiny and smooth.
- Pipe or spoon the dough into small mounds on a parchment-lined baking sheet.
- Bake for 20-25 minutes, then reduce the oven temperature to 350°F (175°C) and bake for an additional 10-15 minutes to ensure the centers are cooked through.
- For the hazelnut filling, make a classic pastry cream with milk, sugar, cornstarch, and hazelnut essence, then add the roasted hazelnuts to the cream.
- For the praline sauce, caramelize the hazelnuts, almonds, and pecans, then blend them with cream and vanilla.
- Once the choux pastries are baked and cooled, fill them with the hazelnut pastry cream and drizzle the praline sauce on top.
- Serve on a tiered platter with additional chopped toasted hazelnuts and a dusting of powdered sugar for presentation.
