Description

These Healthy Banana Pancakes are fluffy, naturally sweet, and packed with nutrients, making them a delightful way to start your day.

Ingredients

Scale
  • 2 ripe bananas
  • 1 cup rolled oats
  • 2 large eggs
  • 1 cup almond milk (or any milk of your choice)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • A pinch of salt
  • Maple syrup (for serving)

Instructions

  1. In a blender or food processor, combine the ripe bananas, rolled oats, eggs, almond milk, baking powder, cinnamon, and salt. Blend until smooth and well combined. Let the batter sit for a few minutes to thicken.
  2. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface if desired.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set. Flip and cook for another 2-3 minutes until golden brown.
  4. Transfer pancakes to a plate and keep warm while cooking the remaining batter. Stack and drizzle with maple syrup before serving.

Notes

  • Don’t overmix the batter; it can make the pancakes tough.
  • Ensure your pan is hot enough before pouring the batter.
  • For thicker pancakes, let the batter sit for a few minutes.
