Ingredients

  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or agave nectar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup crispy brown rice cereal (gluten-free)

Instructions

  1. In a mixing bowl, combine almond flour, cocoa powder, salt, maple syrup, and vanilla extract. Mix until a dough forms. Add a splash of water if too crumbly.
  2. Transfer the dough onto a parchment-lined baking sheet and flatten into a rectangle about 1/4 inch thick. Chill in the fridge for 30 minutes.
  3. In a saucepan over low heat, melt the dairy-free chocolate chips with coconut oil. Stir until smooth, then remove from heat to cool slightly.
  4. Cut the chilled wafer dough into rectangles. Dip each piece in the melted chocolate to coat completely and place on parchment paper.
  5. Before the chocolate sets, sprinkle crispy brown rice cereal on top of each bar. Return to the fridge to harden.
  6. Once set, serve chilled or at room temperature. Slice into smaller portions if desired.
