  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil (or vegetable oil)
  • Sea salt (optional, for garnish)

Instructions

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined and sticky.
  2. Line a 9×9-inch baking dish with parchment paper. Press the coconut mixture evenly and firmly into the dish. Refrigerate for at least 30 minutes.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring each time, until smooth.
  4. Remove the coconut mixture from the fridge and cut it into bars or squares.
  5. Dip each bar into the melted chocolate, coating completely. Use a fork to lift and let excess chocolate drip off.
  6. Place the coated bars on a parchment-lined tray. Sprinkle sea salt on top if desired.
