- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons coconut oil (or vegetable oil)
- Sea salt (optional, for garnish)
Instructions
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined and sticky.
- Line a 9×9-inch baking dish with parchment paper. Press the coconut mixture evenly and firmly into the dish. Refrigerate for at least 30 minutes.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring each time, until smooth.
- Remove the coconut mixture from the fridge and cut it into bars or squares.
- Dip each bar into the melted chocolate, coating completely. Use a fork to lift and let excess chocolate drip off.
- Place the coated bars on a parchment-lined tray. Sprinkle sea salt on top if desired.
- Refrigerate the bars until the chocolate is fully set, about 1 hour. Enjoy!
