  • 1 cup powdered sugar (for filling)
  • 1/4 cup unsweetened cocoa powder (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 2 tablespoons milk (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract and mix until well combined.
  3. Gradually mix the dry ingredients into the wet mixture until just combined. Cover and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoons of dough onto the sheet, spacing them 2 inches apart. Bake for 10–12 minutes.
  5. Let cookies cool completely on a wire rack.
  6. To make the filling, combine powdered sugar, cocoa powder, butter, milk, and vanilla extract. Beat until smooth and creamy. Adjust consistency with a bit more milk if needed.
  7. Spread filling on the flat side of one cookie and top with another to make a sandwich. Repeat for all cookies.
  8. Let fudge rounds set at room temperature for at least 30 minutes before serving.
