Instructions
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract and mix until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined. Cover and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoons of dough onto the sheet, spacing them 2 inches apart. Bake for 10–12 minutes.
- Let cookies cool completely on a wire rack.
- To make the filling, combine powdered sugar, cocoa powder, butter, milk, and vanilla extract. Beat until smooth and creamy. Adjust consistency with a bit more milk if needed.
- Spread filling on the flat side of one cookie and top with another to make a sandwich. Repeat for all cookies.
- Let fudge rounds set at room temperature for at least 30 minutes before serving.
