Homemade Toaster Strudel

Description

Flaky homemade toaster strudels filled with berry jam and topped with a sweet vanilla-almond glaze. A nostalgic breakfast or snack made from scratch with puff pastry and a fruity filling.


Ingredients

  • 2 sheets puff pastry, thawed
  • 2/3 cup of berry jam (blueberry, strawberry, raspberry, etc.)
  • 2 tsp of cornstarch
  • 1 large egg
  • 1 Tbsp of water
  • 1 1/2 Tbsp of salted butter, melted
  • 1 cup of powdered sugar
  • 1 1/2 Tbsp of half and half (and more if needed)
  • 1/4 tsp of vanilla extract
  • 1/8 tsp of almond extract

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone liner.
  2. On a floured surface, unroll one sheet of puff pastry and cut it into 6 equal rectangles.
  3. In a small bowl, mix berry jam with cornstarch.
  4. Spoon 1 1/2 tablespoons of jam mixture onto 3 of the rectangles, leaving a ½-inch border.
  5. Whisk the egg with water in another bowl. Brush edges of jam-covered rectangles with egg wash.
  6. Place remaining pastry rectangles on top, press edges with a fork to seal.
  7. Arrange pastries on the baking sheet, brush tops with egg wash.
  8. Bake for 20 minutes or until golden and puffed.
  9. Transfer to wire rack to cool slightly.
  10. Prepare icing by mixing powdered sugar, half and half, vanilla, and almond extract. Adjust consistency as needed.
  11. Drizzle icing over warm strudels using a piping bag or resealable bag with tip cut off.

Notes

  • Use vegan puff pastry and substitute egg wash with non-dairy milk + cornstarch for a vegan version.
  • Try different fillings like peach or apple preserves, or even chocolate spread.
  • Add citrus zest or nut butter to jam for extra flavor.
  • Keep an eye on baking time as ovens may vary.
