Ingredients

  • 1 egg
  • 1 cup honey (creamed honey recommended)
  • 2 teaspoons vanilla extract
  • 1 ½ cups sweetened shredded coconut
  • 2 cups all-purpose flour
  • 2 cups quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter with a mixer on medium speed until light and fluffy (1–2 minutes).
  3. Add the egg, honey, and vanilla extract to the creamed butter and beat until smooth and well combined (1–2 minutes).
  4. In a separate bowl, mix together the shredded coconut, flour, oats, baking powder, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet mixture until a uniform dough forms. Do not overmix.
  6. Scoop about 2 tablespoons of dough for each cookie, roll into a ball, and place on the prepared baking sheet. Slightly flatten each ball.
  7. Bake for 8–12 minutes or until the edges are lightly golden brown.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • For a dairy-free version, use coconut oil or vegan butter.
  • Replace egg with ¼ cup unsweetened applesauce or a flax egg for a vegan option.
  • Maple syrup or agave nectar can be used instead of honey for a vegan-friendly sweetener.
