Description

Honey & Peanut Butter Blondies are chewy, rich dessert bars made with melted butter, creamy peanut butter, and sweet honey. Topped with crunchy honey-roasted peanuts, these blondies are perfect for peanut butter lovers and great for snacking or sharing.

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 3/4 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1/2 cup honey
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • 1/2 cup honey-roasted peanuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 9″-by-9″ baking pan with parchment paper, leaving a 2-inch overhang on opposite sides. Spray lightly with cooking spray.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, whisk together melted butter and brown sugar until smooth.
  5. Add honey and peanut butter; whisk until combined and glossy.
  6. Whisk in the egg, egg yolk, and vanilla extract until fully incorporated.
  7. Gradually mix dry ingredients into the wet mixture using a spatula until just combined.
  8. Pour the batter into the prepared pan and smooth into an even layer.
  9. Sprinkle chopped honey-roasted peanuts over the top and press gently to adhere.
  10. Bake for 25 to 30 minutes, until the edges pull away and a toothpick comes out clean.
  11. Cool completely in the pan on a wire rack. Lift out using parchment, slice, and serve.
