Honey Tea Cake is a moist and tender dessert that blends the sweetness of honey with the richness of butter and vanilla. It’s simple, nostalgic, and perfect for afternoon tea or cozy gatherings.

- 1 1/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 cup sugar
- 4 large egg yolks at room temperature
- 1 large egg at room temperature
- 1/2 cup heavy cream at room temperature
- 2 teaspoons vanilla bean paste
- 1 stick + 3 tablespoons butter at room temperature
- 1/4 cup honey warmed up and diluted with 2 tablespoons hot water
Instructions
- Preheat oven to 350°F (175°C) and butter and flour an 8.5×4.5 inch baking pan.
- In a bowl, whisk together egg yolks, whole egg, heavy cream, and vanilla bean paste until smooth.
- In a stand mixer bowl, sift together flour, baking powder, salt, and sugar. Mix for 20 seconds.
- Add softened butter and half of the egg mixture to the dry ingredients. Mix on medium-low for 3 minutes.
- Increase speed to medium-high and beat the batter for another 3 minutes until thick and fluffy.
- Reduce speed and slowly add the remaining egg mixture. Mix gently for 2 minutes.
- Pour batter into prepared pan and bake for 35–45 minutes, or until a knife inserted comes out clean.
- While baking, prepare honey syrup by mixing warm honey with 2 tablespoons hot water.
- Brush honey syrup over cake immediately after removing from oven.
- Cool in pan for 20 minutes, then transfer to wire rack to cool completely before serving.
Notes
- For a citrus twist, add lemon zest to the batter.
- Use gluten-free flour or dairy-free substitutes if needed.
- Make sure all ingredients are at room temperature for better mixing.
- The cake is best served the same day but can be stored in an airtight container for up to 3 days.
