Description

Honey Tea Cake is a moist and tender dessert that blends the sweetness of honey with the richness of butter and vanilla. It’s simple, nostalgic, and perfect for afternoon tea or cozy gatherings.


Ingredients

  • 1 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 4 large egg yolks at room temperature
  • 1 large egg at room temperature
  • 1/2 cup heavy cream at room temperature
  • 2 teaspoons vanilla bean paste
  • 1 stick + 3 tablespoons butter at room temperature
  • 1/4 cup honey warmed up and diluted with 2 tablespoons hot water

Instructions

  1. Preheat oven to 350°F (175°C) and butter and flour an 8.5×4.5 inch baking pan.
  2. In a bowl, whisk together egg yolks, whole egg, heavy cream, and vanilla bean paste until smooth.
  3. In a stand mixer bowl, sift together flour, baking powder, salt, and sugar. Mix for 20 seconds.
  4. Add softened butter and half of the egg mixture to the dry ingredients. Mix on medium-low for 3 minutes.
  5. Increase speed to medium-high and beat the batter for another 3 minutes until thick and fluffy.
  6. Reduce speed and slowly add the remaining egg mixture. Mix gently for 2 minutes.
  7. Pour batter into prepared pan and bake for 35–45 minutes, or until a knife inserted comes out clean.
  8. While baking, prepare honey syrup by mixing warm honey with 2 tablespoons hot water.
  9. Brush honey syrup over cake immediately after removing from oven.
  10. Cool in pan for 20 minutes, then transfer to wire rack to cool completely before serving.

Notes

  • For a citrus twist, add lemon zest to the batter.
  • Use gluten-free flour or dairy-free substitutes if needed.
  • Make sure all ingredients are at room temperature for better mixing.
  • The cake is best served the same day but can be stored in an airtight container for up to 3 days.
