- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 egg
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
- Add the egg, honey, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Fold in the chopped walnuts evenly.
- Scoop about 1 tablespoon of dough into each muffin cup, filling them about 3/4 full.
- Bake for 15–20 minutes or until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Serve plain or drizzle with extra honey if desired.
Notes
- For a vegan version, use flaxseed meal or applesauce instead of egg and replace honey with agave syrup.
- Add cinnamon or nutmeg for extra warmth and flavor.
- Store in an airtight container at room temperature for up to 3 days.
