- 1 medium-sized honeydew melon
- 1 large cucumber
- 1/4 cup fresh mint leaves, chopped (plus extra for garnish)
- 2 tablespoons lime juice
- 1 tablespoon honey (optional, for added sweetness)
- A pinch of salt (to taste)
Instructions
- Cut the honeydew melon in half and scoop out the flesh to create hollow bowls.
- Wash the cucumber, cut off the ends, slice it in half lengthwise, and chop into small cubes.
- In a mixing bowl, combine chopped honeydew, cucumber cubes, chopped mint leaves, lime juice, and honey (if using). Add a pinch of salt and toss gently.
- Spoon the mixture into the hollowed-out honeydew bowls.
- Garnish with extra mint leaves and arrange on a serving platter.
