Ingredients

  • 1 medium-sized honeydew melon
  • 1 large cucumber
  • 1/4 cup fresh mint leaves, chopped (plus extra for garnish)
  • 2 tablespoons lime juice
  • 1 tablespoon honey (optional, for added sweetness)
  • A pinch of salt (to taste)

Instructions

  1. Cut the honeydew melon in half and scoop out the flesh to create hollow bowls.
  2. Wash the cucumber, cut off the ends, slice it in half lengthwise, and chop into small cubes.
  3. In a mixing bowl, combine chopped honeydew, cucumber cubes, chopped mint leaves, lime juice, and honey (if using). Add a pinch of salt and toss gently.
  4. Spoon the mixture into the hollowed-out honeydew bowls.
  5. Garnish with extra mint leaves and arrange on a serving platter.
