Description
This creamy banana cheesecake combines the richness of cream cheese with the natural sweetness of bananas, finished with fresh banana slices on top for a stunning presentation and irresistible flavor.

- 1 1/2 cups graham cracker crumbs (or digestive biscuit crumbs)
- 1/4 cup granulated sugar (for crust)
- 1/3 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 2 ripe bananas, mashed
- 1 tsp vanilla extract
- 1/2 cup sour cream or heavy cream
- 1–2 bananas, sliced (for topping)
- 2 tbsp brown sugar (optional, for caramelizing topping)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
- Press the mixture into the bottom of a springform pan. Bake for 10-12 minutes until lightly golden. Let cool completely.
- Lower oven temperature to 325°F (163°C).
- In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Mash bananas and stir them into the cream cheese mixture.
- Fold in sour cream or heavy cream and vanilla extract until fully combined.
- Pour the filling over the cooled crust.
- Bake for 45-50 minutes until edges are set and center is slightly jiggly.
- Turn off oven and let the cheesecake rest inside for 1 hour with the door slightly ajar.
- Remove from oven and cool completely at room temperature.
- Refrigerate for at least 4 hours or overnight.
- Top with fresh banana slices before serving. Optionally, sprinkle with brown sugar and caramelize with a kitchen torch.
