Description

This creamy banana cheesecake combines the richness of cream cheese with the natural sweetness of bananas, finished with fresh banana slices on top for a stunning presentation and irresistible flavor.

  • 1 1/2 cups graham cracker crumbs (or digestive biscuit crumbs)
  • 1/4 cup granulated sugar (for crust)
  • 1/3 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or heavy cream
  • 12 bananas, sliced (for topping)
  • 2 tbsp brown sugar (optional, for caramelizing topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
  3. Press the mixture into the bottom of a springform pan. Bake for 10-12 minutes until lightly golden. Let cool completely.
  4. Lower oven temperature to 325°F (163°C).
  5. In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy.
  6. Add eggs one at a time, mixing well after each addition.
  7. Mash bananas and stir them into the cream cheese mixture.
  8. Fold in sour cream or heavy cream and vanilla extract until fully combined.
  9. Pour the filling over the cooled crust.
  10. Bake for 45-50 minutes until edges are set and center is slightly jiggly.
  11. Turn off oven and let the cheesecake rest inside for 1 hour with the door slightly ajar.
  12. Remove from oven and cool completely at room temperature.
  13. Refrigerate for at least 4 hours or overnight.
  14. Top with fresh banana slices before serving. Optionally, sprinkle with brown sugar and caramelize with a kitchen torch.
