Description

Ice cream brownies combine rich, fudgy brownies with your favorite creamy ice cream for the ultimate indulgent dessert. With a delightful mix of warm and cold, chewy and creamy textures, this treat is perfect for any occasion.


Ingredients

  • 1 ½ cups unsalted butter, melted
  • 2 ¼ cups granulated sugar
  • 1 ½ cups light brown sugar, packed
  • 6 large eggs, room temperature
  • 3 tablespoons vegetable oil
  • 2 tablespoons pure vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 ½ cups cocoa powder
  • 1 ½ teaspoons salt
  • 1.5 quarts of your favorite ice cream flavor

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×8-inch pans and line with parchment paper.
  2. In a medium bowl, mix melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well. Stir in vegetable oil and vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, and salt until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Divide batter between prepared pans and spread evenly.
  5. Bake for 30-40 minutes or until a toothpick comes out with moist crumbs. Cool in pans for 10 minutes, then transfer to a rack to cool completely.
  6. Let ice cream soften for 5-10 minutes. Place one brownie layer back into a pan and spread softened ice cream on top. Add the second brownie layer.
  7. Cover with plastic wrap and freeze for at least 6 hours or overnight. Let thaw for 5-10 minutes before slicing and serving.
