Description

Jam-Filled Almond Muffins are a delightful treat that combines the nutty flavor of almonds with the sweetness of your favorite jam. These muffins are soft, moist, and bursting with flavor, making them perfect for breakfast or a snack.


Ingredients

  • 1 cup almond flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon almond extract
  • 1/2 cup jam (your choice, such as raspberry, strawberry, or apricot)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs. Add the milk, melted butter, and almond extract, mixing until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula until just combined.
  5. Spoon about 1 tablespoon of the muffin batter into each muffin cup. Add about 1 teaspoon of your chosen jam in the center of the batter, then top with another tablespoon of batter.
  6. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Once baked, let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
