  • 1/2 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the almond extract and salt until well combined.
  4. Gradually add the all-purpose flour, mixing on low speed until just combined.
  5. Form the dough into small balls, about 1 inch in diameter, and place them on the baking sheets.
  6. Press down in the center of each cookie to create a small well.
  7. Spoon about 1/2 teaspoon of raspberry jam into each well.
  8. Sprinkle sliced almonds around the edges of each cookie.
  9. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  10. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired.
