  • 1 tsp vanilla extract
  • 12 tbsp heavy cream (or coconut cream)
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk almond flour, erythritol, baking powder, baking soda, and salt in a bowl.
  3. Cream 1/2 cup butter and erythritol until fluffy. Beat in egg, vanilla, and almond extract. Stir in sour cream.
  4. Gradually add dry ingredients to wet until a soft dough forms.
  5. Scoop tablespoonfuls onto sheets, flatten slightly. Bake 10–12 minutes until edges are lightly golden. Cool completely.
  6. For frosting, beat powdered erythritol, 1/4 cup butter, vanilla, and heavy cream until smooth. Tint if desired.
  7. Spread frosting on cooled cookies and top with sprinkles. Allow frosting to set before serving.
