Description

This Keto Danish is a low-carb twist on the classic pastry, featuring a flaky, buttery crust and a sweet, creamy filling—perfect for those on a ketogenic diet who still crave a delicious treat.


Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1/4 cup powdered erythritol (or preferred keto sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cream cheese, softened
  • 1/4 cup sugar-free fruit preserves or low-carb filling of choice (like cream cheese and berries)

Instructions

  1. In a bowl, mix almond flour, coconut flour, powdered erythritol, baking powder, and salt until combined.
  2. In a separate bowl, beat the eggs, then add melted butter and vanilla extract.
  3. Combine wet and dry ingredients to form a dough. Add more almond flour if too sticky.
  4. Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
  5. Preheat oven to 350°F (175°C). Roll out the chilled dough to about 1/2 inch thick and cut into rectangles or ovals.
  6. Place 1 teaspoon of filling in the center of each piece and gently fold the edges over the filling.
  7. Place on a baking sheet lined with parchment paper and bake for 15–20 minutes or until golden brown.
  8. Optional: Mix powdered erythritol with a bit of heavy cream to make frosting and drizzle over cooled Danish.
