- 2 tablespoons coconut flour
- 1/4 cup powdered erythritol (or preferred keto sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/4 cup cream cheese, softened
- 1/4 cup sugar-free fruit preserves or low-carb filling of choice (like cream cheese and berries)
Instructions
- In a bowl, mix almond flour, coconut flour, powdered erythritol, baking powder, and salt until combined.
- In a separate bowl, beat the eggs, then add melted butter and vanilla extract.
- Combine wet and dry ingredients to form a dough. Add more almond flour if too sticky.
- Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out the chilled dough to about 1/2 inch thick and cut into rectangles or ovals.
- Place 1 teaspoon of filling in the center of each piece and gently fold the edges over the filling.
- Place on a baking sheet lined with parchment paper and bake for 15–20 minutes or until golden brown.
- Optional: Mix powdered erythritol with a bit of heavy cream to make frosting and drizzle over cooled Danish.
