A delightful Keto-Friendly Cobbler that combines the sweetness of fresh fruits with a crumbly topping, perfect for low-carb diets.


Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol (or to taste)
  • 1/2 cup butter (melted)
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh strawberries (sliced)
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a mixing bowl, combine the fresh blueberries, raspberries, and sliced strawberries. Optionally, sprinkle a tablespoon of erythritol over the berries and toss gently.
  3. In a separate bowl, whisk together almond flour, remaining erythritol, baking powder, and salt. Add melted butter and vanilla extract, mixing until a thick batter forms.
  4. Pour half of the batter into the prepared baking dish, layer the mixed berries, and spoon the remaining batter over the top.
  5. Bake for 25-30 minutes until the top is golden brown and a toothpick comes out clean.
  6. Let cool for 10-15 minutes before serving warm, optionally topped with whipped cream or sugar-free ice cream.
