- 2 cups almond flour
- 1/2 cup erythritol (or to taste)
- 1/2 cup butter (melted)
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh strawberries (sliced)
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a mixing bowl, combine the fresh blueberries, raspberries, and sliced strawberries. Optionally, sprinkle a tablespoon of erythritol over the berries and toss gently.
- In a separate bowl, whisk together almond flour, remaining erythritol, baking powder, and salt. Add melted butter and vanilla extract, mixing until a thick batter forms.
- Pour half of the batter into the prepared baking dish, layer the mixed berries, and spoon the remaining batter over the top.
- Bake for 25-30 minutes until the top is golden brown and a toothpick comes out clean.
- Let cool for 10-15 minutes before serving warm, optionally topped with whipped cream or sugar-free ice cream.
Notes
- Store in the refrigerator for up to 3 days.
- Can be frozen; thaw in the fridge overnight and reheat in the oven.
