  • 2 tablespoons lemon juice
  • 1/2 teaspoon probiotic powder or plain yogurt (dairy-free options available)
  • Pinch of salt

Instructions

  1. Prepare the Berry Mixture: In a small saucepan over medium heat, combine mixed berries with half the sweetener. Cook for about 5 minutes until berries soften and release juices. Remove from heat and let cool.
  2. Mix the Cheesecake Base: In a bowl, mix coconut milk (or dairy cream), remaining sweetener, vanilla extract, lemon juice, probiotic powder (or yogurt), and salt. Whisk until smooth and creamy.
  3. Layer the Popsicle Mixture: Pour half the cheesecake mixture into molds, add a spoonful of berry mixture (keeping some berries whole), then top with remaining cheesecake mixture.
