- 1/2 cup key lime juice (freshly squeezed)
- Zest of 2 key limes
- 2 tablespoons unsalted butter
- Pinch of salt

Instructions
- Line an 8-inch square baking dish with parchment paper and lightly grease it.
- In a medium saucepan over low heat, melt white chocolate chips and unsalted butter, stirring constantly.
- Stir in sweetened condensed milk, key lime juice, zest, and salt until smooth and well combined. Add green food coloring if desired.
- Pour the mixture into the prepared dish and smooth the top with a spatula. Tap gently to remove air bubbles.
- Let it cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until fully set.
- Lift the fudge using parchment overhang, cut into squares, and serve.
Notes
