Key Lime Pie Mousse is a light, tangy, and creamy no-bake dessert that combines the zesty flavor of key lime with a buttery graham-oat crumble for the perfect individual treat.

- 4 graham crackers
- 3/4 cup rolled oats
- 1/3 cup packed light brown sugar
- 3 tablespoons all-purpose flour
- 6 tablespoons cold butter, cubed
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 cup sweetened condensed milk
- 1/3 cup freshly squeezed key lime juice
- 1 teaspoon pure vanilla extract
- Green food coloring (optional)
- Key lime wedges, for garnish
Instructions
- Preheat oven to 350°F (175°C). In a food processor, pulse graham crackers into fine crumbs. Mix with oats, brown sugar, and flour in a bowl. Cut in cold butter until mixture resembles pebbles.
- Spread mixture on a baking sheet and bake for 20 minutes, stirring halfway through, until golden and crisp. Let cool completely.
- In a large bowl, beat heavy cream and powdered sugar until stiff peaks form. Reserve 1 cup of whipped cream for topping.
- In another bowl, mix condensed milk, key lime juice, vanilla extract, and green food coloring (optional). Gently fold into whipped cream mixture until fully combined.
- To assemble, layer 1/4 cup graham crumble in each of 4 serving glasses. Add mousse mixture, then repeat layers if desired.
- Pipe reserved whipped cream on top using a piping bag with a star tip. Garnish with extra crumble and a key lime wedge.
- Refrigerate for at least 1 hour before serving to allow mousse to set.
Notes
- Use gluten-free graham crackers and flour for a gluten-free version.
- For a dairy-free mousse, substitute coconut cream and dairy-free condensed milk.
- Lemon juice can be used in place of key lime for a different citrus profile.
- Mousse can be made a day ahead for convenience.
