Description

Key Lime Pie Mousse is a light, tangy, and creamy no-bake dessert that combines the zesty flavor of key lime with a buttery graham-oat crumble for the perfect individual treat.


Ingredients

  • 4 graham crackers
  • 3/4 cup rolled oats
  • 1/3 cup packed light brown sugar
  • 3 tablespoons all-purpose flour
  • 6 tablespoons cold butter, cubed
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 cup sweetened condensed milk
  • 1/3 cup freshly squeezed key lime juice
  • 1 teaspoon pure vanilla extract
  • Green food coloring (optional)
  • Key lime wedges, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a food processor, pulse graham crackers into fine crumbs. Mix with oats, brown sugar, and flour in a bowl. Cut in cold butter until mixture resembles pebbles.
  2. Spread mixture on a baking sheet and bake for 20 minutes, stirring halfway through, until golden and crisp. Let cool completely.
  3. In a large bowl, beat heavy cream and powdered sugar until stiff peaks form. Reserve 1 cup of whipped cream for topping.
  4. In another bowl, mix condensed milk, key lime juice, vanilla extract, and green food coloring (optional). Gently fold into whipped cream mixture until fully combined.
  5. To assemble, layer 1/4 cup graham crumble in each of 4 serving glasses. Add mousse mixture, then repeat layers if desired.
  6. Pipe reserved whipped cream on top using a piping bag with a star tip. Garnish with extra crumble and a key lime wedge.
  7. Refrigerate for at least 1 hour before serving to allow mousse to set.

Notes

  • Use gluten-free graham crackers and flour for a gluten-free version.
  • For a dairy-free mousse, substitute coconut cream and dairy-free condensed milk.
  • Lemon juice can be used in place of key lime for a different citrus profile.
  • Mousse can be made a day ahead for convenience.
