Description

A delicate and creamy lavender ice cream made with real culinary lavender, egg yolks, and rich dairy for a floral twist on a classic dessert.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a medium saucepan, combine 1 cup of heavy cream, 1 cup of whole milk, and 3/4 cup of granulated sugar. Add the dried lavender and bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
  2. Remove from heat, cover, and let the mixture steep for 30 minutes.
  3. In a bowl, whisk the egg yolks until they lighten in color.
  4. Gradually whisk a small amount of the warm cream mixture into the yolks to temper them, then pour the egg mixture back into the saucepan with the rest of the cream.
  5. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-15 minutes).
  6. Remove from heat and stir in the vanilla extract and a pinch of salt.
  7. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  9. Transfer to a freezer-safe container and freeze for 4-6 hours until firm.
  10. Let sit at room temperature for 10-15 minutes before serving for best texture.

Notes

  • Do not boil the mixture to avoid curdling the egg yolks.
  • Chill the mixture fully before churning to ensure creamy texture.
  • Add a splash of vodka to help keep the ice cream soft.
  • Use fresh edible flowers or fruit for garnish and flavor pairing.
