- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon dried culinary lavender
- 5 large egg yolks
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a medium saucepan, combine 1 cup of heavy cream, 1 cup of whole milk, and 3/4 cup of granulated sugar. Add the dried lavender and bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat, cover, and let the mixture steep for 30 minutes.
- In a bowl, whisk the egg yolks until they lighten in color.
- Gradually whisk a small amount of the warm cream mixture into the yolks to temper them, then pour the egg mixture back into the saucepan with the rest of the cream.
- Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-15 minutes).
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer to a freezer-safe container and freeze for 4-6 hours until firm.
- Let sit at room temperature for 10-15 minutes before serving for best texture.

- Do not boil the mixture to avoid curdling the egg yolks.
- Chill the mixture fully before churning to ensure creamy texture.
