Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a muffin tin or use paper liners.
  2. In a mixing bowl, cream together softened butter and ½ cup sugar until light and fluffy, about 2-3 minutes.
  3. Add flour and salt, mixing until just combined. Stir in vanilla extract.
  4. Press about a tablespoon of dough into the bottom and sides of each muffin cup to form a cup shape.
  5. Bake cookie cups for 10-12 minutes or until lightly golden. Let them cool slightly.
  6. In a separate bowl, whisk eggs and 1 cup sugar until combined. Add lemon juice, zest, and 2 tablespoons flour; whisk until smooth.
  7. Pour lemon filling into cooled cookie cups, filling each about ¾ full.
  8. Bake for another 15-20 minutes or until filling is set but slightly jiggly in the center.
  9. Let them cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
