Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, beat softened butter and sugar until light and fluffy, about 3–5 minutes.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and beat until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Gently fold in the blueberries.
- Using a cookie scoop or tablespoon, drop dough mounds onto a parchment-lined baking sheet, spacing them evenly.
- Bake for 10–12 minutes or until the edges are lightly golden and the centers are soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Optional: Dust with powdered sugar before serving.
