  • 1 cup heavy whipping cream

  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • Additional blueberries (for garnish)
  • Lemon slices (for garnish)
  • Whipped cream (optional, for garnish)

Instructions

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into a 9×13-inch dish and refrigerate.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add lemon juice and zest, mix well.
  3. Whip heavy cream in a separate bowl until soft peaks form. Gently fold into the lemon mixture.
  4. Spread half of the lemon mixture over the chilled crust. Set aside.
  5. In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until berries burst, about 5–7 minutes.
  6. Mix cornstarch and water into a slurry and stir into blueberry mixture. Cook until thickened and glossy, about 2–3 minutes. Let cool.
  7. Spread cooled blueberry layer over the lemon layer. Then top with the remaining lemon mixture.
  8. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  9. Before serving, garnish with blueberries, lemon slices, and whipped cream if desired.
