Instructions
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into a 9×13-inch dish and refrigerate.
- In a large bowl, beat cream cheese and sugar until smooth. Add lemon juice and zest, mix well.
- Whip heavy cream in a separate bowl until soft peaks form. Gently fold into the lemon mixture.
- Spread half of the lemon mixture over the chilled crust. Set aside.
- In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until berries burst, about 5–7 minutes.
- Mix cornstarch and water into a slurry and stir into blueberry mixture. Cook until thickened and glossy, about 2–3 minutes. Let cool.
- Spread cooled blueberry layer over the lemon layer. Then top with the remaining lemon mixture.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with blueberries, lemon slices, and whipped cream if desired.
