Description

  • 2 tbsp lemon zest (from about 2 lemons)
  • 2 tbsp lemon juice (from about 1/2 lemon)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp lemon juice (for glaze)
  • Additional lemon zest for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, granulated sugar, salt, and baking powder.
  3. In a large bowl, cream the softened butter until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in lemon zest and lemon juice until fully incorporated.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 22–25 minutes or until a toothpick inserted in the center comes out clean.
  8. While the brownies cool, whisk together powdered sugar and lemon juice to make the glaze. Adjust juice amount for desired consistency.
  9. Once brownies are cool, spread glaze evenly over the top. Garnish with extra lemon zest if desired.
  10. Let the glaze set, then slice into squares and serve.
