Ingredients

  • 4 slices of rustic bread (such as sourdough or whole grain)
  • 1 cup ricotta cheese
  • 1/2 cup lemon curd (store-bought or homemade)
  • Fresh mint leaves (about 1/4 cup, for garnish)
  • 1 tablespoon honey (optional, for drizzling)
  • Pinch of salt (to taste)
  • Olive oil (for brushing the bread)

Instructions

  1. Preheat your oven to 400°F (200°C). Place the slices of rustic bread on a baking sheet. Brush one side of each slice lightly with olive oil.
  2. Bake the bread in the preheated oven for about 8-10 minutes, or until the edges are golden brown and crispy.
  3. Once the bread is toasted, remove it from the oven and let it cool slightly. Spread a generous layer of ricotta cheese on the unbrushed side of each slice.
  4. Top the ricotta with a generous spoonful of lemon curd, spreading it evenly over the ricotta layer.
  5. Tear fresh mint leaves and scatter them artfully over the lemon curd.
  6. For added sweetness, drizzle a little honey over the top of the toast, if desired.
  7. Arrange the lemon curd and ricotta toast on a rustic wooden board or platter. Serve immediately while the toast is still warm and crispy.
