Lemon Fritters

Description

Crisp on the outside and tender on the inside, these lemon fritters offer a delightful burst of citrus flavor in every bite, perfect for a light and refreshing treat.


Ingredients

  • 1 cup of all-purpose flour
  • 2 tablespoons of granulated sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of milk
  • 1 large egg
  • Zest from 1 large lemon
  • Juice from 1 large lemon (approximately 2 tablespoons)
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Sift together the flour, granulated sugar, baking powder, and salt in a mixing bowl.
  2. In a separate bowl, whisk the milk, egg, lemon zest, and lemon juice until well combined.
  3. Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
  4. Heat about 2 inches of vegetable oil in a heavy skillet over medium heat. Test the oil by dropping a small spoonful of batter in; it should sizzle and rise.
  5. Drop spoonfuls of batter into the oil using a tablespoon or small scoop, and fry for 2-3 minutes on each side until golden brown.
  6. Remove with a slotted spoon and place on a paper towel-lined plate to drain.
  7. Dust the warm fritters with powdered sugar and serve immediately with lemon wedges if desired.

Notes

  • Use gluten-free flour with xanthan gum for a gluten-free version.
  • Use almond or plant-based milk and a flax/chia egg for dairy-free or vegan alternatives.
  • Replace sugar with erythritol or stevia for a sugar-free option.
