Instructions
- Sift together the flour, granulated sugar, baking powder, and salt in a mixing bowl.
- In a separate bowl, whisk the milk, egg, lemon zest, and lemon juice until well combined.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- Heat about 2 inches of vegetable oil in a heavy skillet over medium heat. Test the oil by dropping a small spoonful of batter in; it should sizzle and rise.
- Drop spoonfuls of batter into the oil using a tablespoon or small scoop, and fry for 2-3 minutes on each side until golden brown.
- Remove with a slotted spoon and place on a paper towel-lined plate to drain.
- Dust the warm fritters with powdered sugar and serve immediately with lemon wedges if desired.
