  • 1 1/2 cups powdered sugar

  • 3 to 4 drops purple food coloring
  • Lavender buds, to garnish
  • Lemon zest, to garnish

Instructions

  1. Preheat oven to 350°F (180°C) and line two baking sheets with parchment paper.
  2. Whisk together flour, cornstarch, and baking powder in a small bowl; set aside.
  3. Cream butter, granulated sugar, lemon zest, and dried lavender buds using an electric mixer until light and fluffy (2-3 minutes), scraping sides as needed.
  4. Add the egg and mix until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Using a small cookie scoop, drop tablespoon-sized balls of dough onto prepared sheets, spacing 2 inches apart.
  7. Gently flatten each ball to about 1/3 inch thickness with your palms.
  8. Bake for 12-15 minutes until edges are lightly golden; cool on baking sheet for 5 minutes before transferring to wire racks.
  9. Whisk powdered sugar, lemon juice, lavender extract, and purple food coloring until thick but pourable to make glaze.
  10. Drizzle or spoon glaze over cooled cookies and garnish with lavender buds and lemon zest.
  11. Let glaze set for about 30 minutes before serving.
  12. Store cookies in an airtight container at room temperature for up to four days.
