Instructions
- Preheat oven to 350°F (180°C) and line two baking sheets with parchment paper.
- Whisk together flour, cornstarch, and baking powder in a small bowl; set aside.
- Cream butter, granulated sugar, lemon zest, and dried lavender buds using an electric mixer until light and fluffy (2-3 minutes), scraping sides as needed.
- Add the egg and mix until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Using a small cookie scoop, drop tablespoon-sized balls of dough onto prepared sheets, spacing 2 inches apart.
- Gently flatten each ball to about 1/3 inch thickness with your palms.
- Bake for 12-15 minutes until edges are lightly golden; cool on baking sheet for 5 minutes before transferring to wire racks.
- Whisk powdered sugar, lemon juice, lavender extract, and purple food coloring until thick but pourable to make glaze.
- Drizzle or spoon glaze over cooled cookies and garnish with lavender buds and lemon zest.
- Let glaze set for about 30 minutes before serving.
- Store cookies in an airtight container at room temperature for up to four days.
