Description

Ingredients

  • 3 large eggs
  • ½ cup milk
  • ½ cup vegetable oil
  • ¼ cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons poppy seeds
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons additional lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and add milk, vegetable oil, lemon juice, and lemon zest. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Fold in the poppy seeds.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Whisk together powdered sugar and additional lemon juice for the glaze.
  10. Drizzle the glaze over the cooled bread.
  11. Slice and serve as a delightful breakfast or snack.
