- 1 large egg yolk
- Powdered sugar (for dusting, about 1/4 cup or 30 g)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the lemon zest and lemon juice until well combined.
- Add the egg yolk to the mixture and beat until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, poppy seeds, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently press down in the center of each cookie to create a well for the lemon curd.
- Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden.
- Once cooled, fill each thumbprint well with lemon curd.
- Lightly dust the cookies with powdered sugar before serving.
