Description

Ingredients

  • 3/4 cup granulated sugar (150 g)
  • 1 tablespoon lemon zest (from about 1 large lemon)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons poppy seeds
  • 1 large egg yolk
  • Powdered sugar (for dusting, about 1/4 cup or 30 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the lemon zest and lemon juice until well combined.
  4. Add the egg yolk to the mixture and beat until fully incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, poppy seeds, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  6. Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently press down in the center of each cookie to create a well for the lemon curd.
  8. Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden.
  9. Once cooled, fill each thumbprint well with lemon curd.
  10. Lightly dust the cookies with powdered sugar before serving.
